Bai Sha Lu green tea is one of the most famous steaemed green tea of Hainan island, South China Sea and it's the first green tea produced every year.




The Bai Sha Lu it's a Chinese green harvest in a particular place in the country and also process in a different way. These leaves come from the island of Hainan that is at the extreme south of China and has a particular weather because it is quite far from the costs of the continent. The microclimate of the island allows the farmers to harvest these tea plants before any other in the rest of the country so this is the first Chinese green tea produced every year. Besides this different harvest period also the processing it's different here, in fact, the leaves are steamed, not roasted as usual so the vegetal aromas of this tea are quite different from the ones in the continent. In the mouth we can taste flavors of different boiled vegetables with a definite mineral part and, after we swallowed the liquor, we obtain a delicate sweet aftertaste similar to the white beans one.

This tea, for its processing, is produced like a green tea in Japan so, after a brief withering, the oxidation is stopped quickly in the leaves using hot steam. Then the leaves are rolled to its final form and dried with hot air to fix all the proprieties of the product.

We invite you to brew this tea in the traditional Chinese style (gong fu cha) in order to extract more from your leaves. Following this preparation you could use 4 grams of leaves (about 2 teaspoons) in a gaiwan of 100 ml so you can obtains more infusions with different flavors. After a brief rinse of the leaves in a 85°C water you can go with a first infusion of 15 seconds and, after that, at the same water temperature, you can do multiple infusion adding 5 seconds every steeping time (15 - 20 - 25 ...) These leaves could be steep about 5 times. To prepare the tea in the western style we suggest 2 grams of leaves (about 1 teaspoons) in a 150 ml cup with 85°C water for a steeping time of one minute and an half. The tea could be filtered if you want to avoid some little piece of the leaves during the tasting time and also the steeping time we recommend here could be modify on your personal preferences.

Storage: we recommended you to store this tea in a dry and cool place avoiding the direct sun light on the leaves.

  • 5 teaspoons of brown sugar
  • 5 fresh basil leaves
  • 2 slices of lemon
  • 1 slice of file for decorating

Prepare the Bai Sha Lu green tea infusion according to the instructions. Add 4-5 teaspoons of brown sugar and 1 stick of liquorice root to the tea. Stir, cool and leave to cool in the refrigerator for about 1 hour. Remove the licorice, pour the tea into 4 glasses, add 4-5 basil leaves, 2 slices of lemon, plenty of ice and mix.
