Dashi Soup with Darjeeling red tea

The Dashi is a light Japanese fish soup usually used as a starter for other dishes. In this recipe we show you a testier version of this soup enriched by the flavor of a Darjeeling red tea.

Ingredients for three bowls of soup:

-40g of dried tomatoes

-15g of dried shiitake mushrooms

-15g of soy sauce

-25g of honey

-10g of miso

-15g of Darjeeling tea leaves

-5g of salt

How to prepare the dashi soup:

Combine in a medium saucepan the tomatoes, the mushrooms, the soy sauce and the honey. Add a liter of water to the ingredients and put the saucepan on the fire till the solution arrive at the boiling temperature. Now turn down the heat to the minimum and let the soup simmer for five minutes. Then remove the solution from the fire and add miso, salt and the tea leaves. Wait other 5 minutes in order to let the flavors of the tea leaves spreading in the soup and then filter the mixture.

After the soup has cooled down you can use it as a base for other dishes or enjoy it alone with the shiitake involved in the recipes. We suggest you to give a light cooking to the mushroom in a pan before combine it again with the soup.
